Sweet & Sour Chicken


2lbs skinless chicken breast
Castella Salt & Pepper (to taste)
1 cup cornstarch
3 large eggs (lightly beaten)
1/4 cup extra light olive oil, canola oil or vegetable oil (plus more as needed)
1.5 cups Castella Sweet & Sour Duck Sauce
Castella Sesame Seeds (for garnish)


  1. Cut chicken breasts into 1 inch pieces and season with salt & pepper
  2. Place 1 cup of cornstarch in to a gallon-sized ziploc bag, add chicken and toss to coat
  3. Heat 1/4 cup of oil in a large pot (Large pot helps reduce splatter)
  4. In a shallow dish, whisk together 3 eggs. Dip cornstarch covered chicken pieces into beaten egg, coating both sides.
  5. Transfer chicken to very hot oil. Cook chicken in hot oil about 30 seconds on each side or until golden. (The chicken does not need to cook all the way through)
  6. Transfer chicken into a 13x9 baking dish as you go.
  7. Pour Castella Sweet & Sour Sauce over chicken in baking dish and toss to coat.
  8. Bake chicken uncovered at 325˚ for 1 hour, turning the chicken twice while baking to coat with sauce.
  9. Sprinkle chicken with sesame seeds. Serve over white rice and steamed broccoli
