Grilled Lemon Chicken with Olive Salsa


For Chicken:
6 Chicken Breasts 6 oz each
¼ cup Castella Lemon Juice
1/3 cup Aegean Extra Virgin Olive Oil
2 tbsp Fresh Parsley, chopped
1 tbsp Castella Chopped Garlic in Water
¼ tsp of Salt
¼ tsp of Castella Ground Black Pepper

For Salsa:
1 Cucumber diced
1 Red pepper diced
2 Tomatoes diced
½ Red Onion diced
2 tsp Castella Chopped Garlic in Water
1 tsp Castella Oregano Leaves
1 cup Castella Kalamata olives
¼ lb Castella Greek Feta Cheese
2 tbsp Red wine vinegar
1 tbsp of Dijon mustard
3 oz Aegean Extra Virgin Olive Oil
Salt and pepper to taste


  1. Place chicken breasts between two pieces of plastic and pound them thin.
  2. In a bowl whisk oil, lemon, garlic, parsley garlic, salt & pepper together.
  3. Add in your chicken and let marinate for an hour or two.
  4. Preheat your grill to a medium high.
  5. Grill the breasts turning them once, until they are cooked through.
  6. When cooked set aside.
  7. In a large bowl put diced cucumber, olives, peppers, tomatoes, red onion.
  8. Add in garlic, oregano, vinegar, mustard, oil.
  9. Mix together add in feta cheese.
  10. Season with a little salt and pepper
  11. Place your warm chicken on a platter and top with olive brochette
  12. Garnish with a slice of lemon and sprinkle of parsley.
