Blackened Snapper


6 large skinless snapper fillets, ¾ inch thick
4 ½ oz unsalted butter, melted
2 tbsp Castella Cajun Seasoning
2 tsp Castella Extra Fancy Paprika
Lemon wedges, for serving


  1. Brush each fish fillet liberally with the melted butter
  2. Combine the Cajun seasoning and paprika, then sprinkle thickly over the fish. Use your fingers to rub the spice mix evenly over the fillets.
  3. Heat a large frying pan over high heat. Cook two fillets at a time in the pan for 1-2 minutes on one side. Turn and cook  for another few minutes, or until the fish is cooked and flakes easily.
  4. The surface should be well charred on each side. Add extra butter if necessary. Serve drizzled with any remaining butter and lemon wedges.
