Fig & Cinnamon Slices


4 ½ Oz. Unsalted Butter
¼ Cup Soft Brown Sugar (firmly packed)
1 Tsp. Castella Ground Cinnamon
1 ½ Cups All-Purpose Flour
2 ⅓ Cup Dried Figs
1 Castella Cinnamon Stick
½ Cup Superfine Sugar


  1. Preheat the oven to 180°/ lightly grease and 7" x 10 3/4" baking tin and line with paper, hanging over the two long sides.
  2. Beat the butter, brown sugar and cinnamon until light and fluffy, and then fold in the flour with a large spoon.  Press the mixture evenly into the tin and bake for 25 minutes.  Cool slightly.
  3. Place the dried figs, cinnamon stick and 1 ½ cups boiling water in a saucepan, mix together and bring to a boil.  Reduce the heat and simmer for 20 minutes, or until the figs have softened and the water has reduced by a third.  Remove the cinnamon stick and lace the mixture in a food processor.  Process in short bursts until smooth.
  4. Pour onto the cooked base and bake for 10 minutes, or until set.  Cool in the tin, then lift them out and cut into squares.

Makes 15 squares.
