Chocolate Chip & Pistachio Friands


5 ½ Oz. Shelled Pistachio Nuts
½ Cup All-Purpose Flour
6 Oz. Un-Salted Butter
1 ⅔ Cups Confectioner’s Sugar
2 Tbsp Coca
½ Tsp. Castella Ground Cardamom
5 Egg Whites (lightly whisked)
7 Oz. Chocolate Chips
Extra Confectioner’s Sugar (to dust)


  1. Preheat the oven to 400° degrees F.  Grease and then line ten friand tins, or ten 1/2 cup capacity muffin holes.  Place the pistachio on the baking tray and roast them for 5 minutes.  Remove from the oven and allow them to cool.  Place the pistachio and flour in a food processor and process until finely ground.
  2. Place the butter and confectioner’s sugar in a bowl and beat until it is light and creamy.  Sift together the pistachios and flour with the cocoa and cardamom, and fold it into the creamed mixture.
  3. Stir the egg whites into the creamed mixture, together with the chocolate chips, and mix to combine.  Spoon the mixture into the prepared tins and bake for 25-30 minutes, or until they come away from the sides of the tin.  Cool them on wire racks. Dust lightly with confectioner’s sugar, to finish.
