Mandarin Muffins


1 1/2 cups All-purpose Flour
1/2 cup Sugar
1 3/4 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Castella Ground Nutmeg
1/2 cup Cold Butter 
1 Egg
1/2 cup Milk
1 tsp Regal Almond Extract
11 oz Castella Mandarin Oranges, broken segments

1/3 cup Sugar
1 tsp Castella Ground Cinnamon
1/2 cup Butter, melted 


  1. In a large bowl, combine the first five ingredients.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. In another bowl, whisk the egg, milk and extract. Stir into crumb mixture just until moistened.
  4. Fold in oranges.
  5. Fill greased or paper-lined miniature muffin cups two-thirds full. Bake at 350 degrees F for 15-20 minutes. Cool for 5 minutes before removing from pans to wire racks.
  6. Combine sugar and cinnamon. Dip tops of warm muffins in melted butter, then in cinnamon-sugar.
