Stuffed Mushrooms


5 oz Pancetta
½ cup Castella Chopped Onion
10 oz Baby Spinach
10 oz Castella Olives Stuffed with Feta, chopped
Pinch Castella Red Crushed Pepper
4 oz Castella Seasoned Breadcrumbs
1 ½ lb Button Mushrooms


  1. Preheat oven to 375°.
  2. Cook pancetta until crisp, transfer to paper towels to drain.
  3. Saute onions until tender.
  4. Saute spinach until just wilted.
  5. Transfer pancetta, onion, spinach, chopped stuffed olives, red pepper and breadcrumbs to a bowl and mix together.
  6. Saute mushrooms in pan, drain.
  7. Transfer mushrooms to baking pan and heap 1 tsp of fillings into each.
  8. Bake mushrooms until heated through, about 10 minutes.
