Falafel Bombs with Pickled Jalapeno Lime Mayo


Part I
32 oz Chickpeas
4 Tbsp. Castella Roasted Garlic
4 Tbsp. Castella Garlic Flavored Olive Oil
4 Tbsp. Castella Lemon Juice
1/2 bunch of parsley roughly chopped
6 Mint Leaves
1 tsp. Castella Paprika
1 tsp. Castella Cumin
1 tsp. Castella Coriander
1/2 tsp. Castella Red Cayenne
1/2 cup vegetable stock or water (enough to bring ingredients together).
Salt and Pepper to taste

Part II
12oz cooked LIVE Quinoa
2 Tbsp. Castella Sesame Seeds
3 Tbsp. Castella Flax Seeds
1 cup of potato starch
1 cup of rice flour

Pickled Jalapeno Lime Mayo
2 cups Mayo
1/2 cup Castella Jalapenos
1/4 cup Castella Jalapeno juice from jar
juice of 1 lime
zest of 1 lime
1/4 tsp. Castella Cilantro
1 tsp. Castella Ground Coriander
Salt and Pepper to taste


  1. Blend all "Part I" Ingredients in a food processor until all is incorporated and it just starts to be smooth. Some lumps are good for texture.
  2. Put Mixture in a bowl and fold in all "Part II" ingredients
  3. Form mixture into small balls and fry for falafel
  4. To make Pickled Jalapeno Lime Mayo put all ingredients into a food processor or blender until smooth. Use as dip
