Ingredients
24 Wonton Wrappers
1 cup Shredded Cheddar Cheese
1 cup Cooked Chicken, Diced
1/2 cup
Castella Roasted Red Peppers
1 cup Chopped Tomatoes
1/2 tsp
Castella Ground Chipotle
1/2 cup Scallions, Chopped
Method
Preheat oven to 350°
Fit 1 wonton wrapper into each mini muffin baking sheet, coated with cooking spray, press down gently.
Bake for about 5 minutes or until lightly browned.
Combine remaining ingredients,leaving about half the cheese separate, drain a bit if it's too juicy.
Add a little cheese into each cup, followed by 1 tbsp of the chicken mixture, then top each with more cheese.
Bake at 350° for about 5 minutes until cheese melts.
Remove from muffin pan and serve immediately.
